At the ripe old age of 35 and some change, God had finally dropped the perfect man for me smack dab in front of me. All I could say is that it was His timing and not mine!
For the first year and half of marriage I held the titles Wife and Domestic Engineer, which encompasses the role of head cook and bottle washer, laundress, housekeeper, personal assistant, and dietitian.
In the second half of my second year as Wife and Domestic Engineer, we added the title of Mama. The new role brought added responsibilities, laughter and tears, and more love than my husband and I could have ever imagined. A little human who changed our lives for the better.
Finding ways to feed my little family healthy food that they enjoy is difficult but rewarding. Some of the recipes I’ve tried have been udder failures.
Recipes that are Keto, Paleo, and Gluten-Free aren’t specific to diabetes, in fact even recipes that are supposed to be diabetic friendly, usually aren’t really good for diabetics.
My diabetic husband loves pancakes and peanut butter drenched in syrup with a glass of milk.
How about biscuits and gravy, fried pork steak with mashed potatoes and gravy, or fried potatoes with cornbread and beans? Fried frog legs?
What do you replace those with? The first batch of pancakes I made for him after we were married got rejected by our outdoor cats. Yes, you read that correctly, cats wouldn’t even eat the pancakes. That’s pretty bad when you followed a recipe. Some of the biscuits I’ve made came out like hockey pucks.
In the last two-ish months, I have found a coconut flour pancake recipe that is completely edible and my husband likes. The recipe is one I modified from Gluten Free Dish by Dish.
